Have fun - cook healthy use Pampered Chef

Rock Crok Chicken and Potato One-Pot Dinner!
1 whole chicken (4-5 lbs.)
Canola oil for spritzing
1 tbsp. Bell Pepper Herb Rub (or any Rub or Seasoning Mix of your choice)
2 cups chicken stock or broth
2 garlic cloves, pressed with Garlic Press
2 lbs. "B" size unpeeled Yukon Gold potatoes
6 garlic cloves, peeled
½ tsp salt
¼ tsp pepper
DIRECTIONS
1. Remove and discard giblets and neck from chicken cavity. Trim excess fat from chicken with Professional Shears, if necessary.
2. Spritz or rub chicken with oil then shake- shake -shake on rub to completely coat outside of chicken with rub.
3 Place chicken, breast side up, into Rockcrok® (4-qt.) Dutch Oven. Arrange potatoes and garlic around chicken (see Cook’s Tips).
4. Microwave, covered, on HIGH 30 minutes (7 minutes per pound of chicken) or until internal temperature reaches 165°F (74°C) in thickest part of breast and juices run clear.
5. Remove Dutch Oven from microwave. Let stand 10 minutes (temperature will rise to 170°F/77°C). Remove chicken to Large Grooved Cutting Board; carve.
6. Add salt and pepper; mash with Mix ‘N Masher. Serve with chicken.
Cook's Tips:
Garlic Mashed Potatoes Variation: The potatoes fit closely around the chicken. No need to add extra liquid; the drippings are enough to cook the potatoes! (See Step 3)
A whole chicken works best in this recipe (rather than chicken pieces) because it will be more tender and juicy. And, the drippings from the whole chicken are used to season the potatoes!

Just finished a Pampered Chef cooking show as a wedding showers using this pizza reciepe. All loved it.
Three-Cheese
Garden Pizza
Garden-fresh vegetables and a trio of
cheeses make this pizza a winner.
1 tsp plus 1 tbsp vegetable oil, divided
1 pkg (13.8 oz) refrigerated pizza crust
2 garlic cloves, pressed
1 oz Parmesan cheese, grated
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
1 tsp Italian seasoning
1 small onion
1 medium zucchini
2 plum tomatoes
1 cup mushrooms
1. Preheat oven to 400°F. Lightly spread 1 tsp of the oil over Large Bar Pan. Unroll dough onto bottom of pan, gently
stretching and pressing dough to cover bottom. Drizzle remaining 1 tbsp oil over dough. Press garlic over dough
using Garlic Press; spread evenly using Small Mix ’N Scraper®. Bake crust 7 minutes.
2. Meanwhile, grate Parmesan cheese using Microplane® Adjustable Grater. Combine cheeses and Italian seasoning
in Classic Batter Bowl; toss lightly using scraper. Using Color Coated Santoku Knife, thinly slice onion, zucchini
and tomatoes crosswise. Thinly slice mushrooms.
3. Remove pan from oven. Sprinkle half of the cheese mixture evenly over crust; layer evenly with onion, zucchini,
tomatoes and mushrooms. Sprinkle with remaining cheese mixture. Bake 15–18 minutes or until crust is golden
brown. Remove from oven; cut pizza into squares using Pizza Cutter.
Yield: 6 servings

Cholesterol 35 mg, Carbohydrate 36 g, Protein 17 g, Sodium 810 mg, Fiber 2 g
Cook’s Tips:
Italian Seasoning Mix can be substituted for the Italian seasoning, if desired.
• For best results, layer vegetables over the pizza in the order as directed in Step 3.
